Broccoli Cheddar Quiche

Like many people, my go-to breakfast protein is eggs. It may simply be a scrambled egg on toast or a fancy frittata in my cast iron skillet. One of my favorite ways to eat eggs is quiche! Served up with some fruit and greens, this Broccoli Cheddar Quiche is perfectly savory, plus if gives you a use for the bag of frozen broccoli you bought last month but forgot was in your freezer.

Ingredients:

  • 1 large pie crust 
  • 6 large eggs
  • 3/4 cup cream
  • 3/4 tsp salt
  • 1/2 tsp black pepper 
  • 1 cup chopped broccoli (frozen or fresh)
  • 1 1/2 cup shedded cheddar cheese
  • 2 TBS chopped green onion

Instructions:

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, whisk together eggs, cream, salt and pepper.
  3. Spread chopped broccoli and cheese evenly in the pie crust. Pour the egg mixture over top. Top with green onions. Bake for 35-40 minutes until the center is completely set.
  4. Let cool for 5-10 minutes before slicing and serving.
